A Salov research project implemented in 2020, carried out with the collaboration of the DiSAAA-a (Department of Agricultural, Food and Agro-environmental Sciences, University of Pisa).
This is highly innovative applied research, going into production in January 2021 as an industry standard, characterised by optimising process efficiency and yield and replacing chemical reagents with enzymes (phospholipases).
